{"id":31243,"date":"2018-04-11T13:06:47","date_gmt":"2018-04-11T18:06:47","guid":{"rendered":"http:\/\/www.allyngibson.com\/?p=31243"},"modified":"2018-04-11T13:08:38","modified_gmt":"2018-04-11T18:08:38","slug":"cheese-and-onions-experimentation","status":"publish","type":"post","link":"http:\/\/www.allyngibson.com\/?p=31243","title":{"rendered":"Cheese and Onions Experimentation"},"content":{"rendered":"<p>Of late I have been experimenting with cheese and onions sandwiches.<\/p>\n<p><a href=\"http:\/\/www.allyngibson.com\/?p=31177\">I mentioned back in March<\/a> that, because of George Harrison&#8217;s 75th birthday, I rewatched Eric Idle&#8217;s <i>The Rutles: All You Need Is Cash<\/i>.  Harrison was a huge fan of Idle&#8217;s satire of the Beatles, and he even had a cameo as a reporter covering the decline and fall of Rutle Corp.  One sequence of the film involves the song &#8220;Cheese and Onions,&#8221; seen in the classic Rutles animated film <i>Yellow Submarine Sandwich<\/i>, and despite hearing the song many a time, as I like the Rutles, I realized I had no idea what a cheese and onions sandwich actually was.<\/p>\n<p>When I looked into the matter, I discovered, as I put it in an email to a work colleague in the UK, &#8220;Is a British-style cheese and onions sandwich really just shredded cheese, diced onions, and mayonnaise blended together and slapped on two pieces of bread?  I&#8217;ve heard the Rutles song &#8216;Cheese and Onions&#8217; for years and assumed it was some sort of awesome thing, but I feel a bit underwhelmed if it&#8217;s just a cheese\/onion\/mayo blend.&#8221;<\/p>\n<p>The reply I got back:<\/p>\n<blockquote><p>I&#8217;m afraid I&#8217;ll have to shatter the illusion, Allyn, that is indeed correct.  It&#8217;s still a pretty nice sandwich, but I guess when you&#8217;ve expected so much of it, it can be a let down.  Here&#8217;s a photo of a pretty common example!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"640\" height=\"347\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/04\/cheese-and-onions.jpg\" alt=\"\" class=\"aligncenter size-full wp-image-31242\" \/><\/p><\/blockquote>\n<p>Something simple offers an opportunity to experiment, and so I have.<\/p>\n<p>I went to the <a href=\"http:\/\/www.padutchmarketcockeysville.com\">Dutch Market<\/a> in Cockeysville on my way home from work on Friday and picked up a wedge of Guinness porter cheese.  I also picked up a block of Monterey Jack in case I needed more cheese; it&#8217;s bland and inoffensive and would make a good mix.<\/p>\n<p>Instead of mayonnaise, I wanted something healthier.  Non-fat yogurt!  <a href=\"https:\/\/oureverydaylife.com\/use-yogurt-sour-cream-instead-mayo-21238.html\">You can substitute one for the other<\/a>.<\/p>\n<p>And rather than dice my onions, I bought frozen diced onions.  It&#8217;s simpler and works just as well.<\/p>\n<p>I began by shredding my cheese.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"900\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/04\/IMG_20180408_115953966_BURST000_COVER_TOP-1200x900.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31239\" \/><\/p>\n<p>Shred, shred, shred.  Shred, shred, shred.  I didn&#8217;t take the wax off the Guinness cheese wedge (you can eat cheese wax, it won&#8217;t hurt you), but it didn&#8217;t shred on the grinder, breaking off in large pieces instead.  I stopped every few minutes and shredded some Monterey Jack into the bowl, then went back to the Guinness cheese.  I eventually decided I didn&#8217;t need any more Monterey Jack and focused on the Guinness.  When I had no more Guinness cheese, I mixed the cheeses by hand.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"900\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/04\/IMG_20180408_120432106-1200x900.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31237\" \/><\/p>\n<p>The cheese shredded and my arm tired, I dumped a bunch of frozen diced onions into the bowl.  How many?  I don&#8217;t know.  Two cups-ish, maybe?  &#8220;That looks like a good amount of onions&#8221; was, literally, my justification.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"900\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/04\/IMG_20180408_120553781-1200x900.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31238\" \/><\/p>\n<p>Then I dumped in the non-fat yogurt (vanilla flavored), about two-thirds of the serving, and then began to stir.  And stir.  And stir some more.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"900\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/04\/IMG_20180408_120910774-1200x900.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31236\" \/><\/p>\n<p>I think I stirred for about ten minutes.  It <i>seemed<\/i> like ten minutes, anyway.  And once I was satisfied, I spooned the mixture into a Rubbermaid container.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"900\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/04\/IMG_20180408_121116676-1200x900.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31234\" \/><\/p>\n<p>A &#8220;cheese and onions&#8221; mixture is essentially the same thing as a pimento cheese spread; the only difference is one has onions and the other has pimentos.  And while I like pimento cheese by itself, I felt that, when it came time to eat a Guinness cheese and onions sandwich, it was going to see something more.  It needed a meat.<\/p>\n<p>But which one?  Ham?  No.  I didn&#8217;t think that would work.  Roast beef?  I could see that going well with the Guinness.<\/p>\n<p>Turkey!  That would be <i>awesome<\/i>.<\/p>\n<p>To the grocery store I went for sliced turkey.<\/p>\n<p>I&#8217;ve been packing this for lunch this week &mdash; sliced turkey, deli mustard, Guinness cheese and onions spread.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"900\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/04\/IMG_20180410_132502408_HDR-1200x900.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31235\" \/><\/p>\n<p>The result is a nice, pleasant little sandwich.  I&#8217;m sure, by the time I&#8217;ve finished off the container of cheese and onions spread I made on Sunday, that I&#8217;ll be tired of cheese and onion sandwiches and I&#8217;ll be ready to go back to peanut butter and banana.  But for right now, it&#8217;s pleasant.  The turkey and the Guinness cheese go together well, the vanilla yogurt gives it a nice, tangy finish.
