{"id":31417,"date":"2018-07-18T16:27:50","date_gmt":"2018-07-18T21:27:50","guid":{"rendered":"http:\/\/www.allyngibson.com\/?p=31417"},"modified":"2018-07-18T16:31:00","modified_gmt":"2018-07-18T21:31:00","slug":"the-ultimate-cheese-and-onions-sandwich","status":"publish","type":"post","link":"http:\/\/www.allyngibson.com\/?p=31417","title":{"rendered":"The Ultimate Cheese and Onions Sandwich"},"content":{"rendered":"<p>I may have created the ultimate cheese &amp; onions sandwich!<\/p>\n<p><a href=\"http:\/\/www.allyngibson.com\/?p=31243\">Back in the spring<\/a>, for nerdy reasons, I began experimenting with the British-style cheese and onions sandwich.  There&#8217;s a Rutles song about the sandwich, and in my mind I imagined that a cheese and onions was some amazing thing, completely unknown to American shores.<\/p>\n<p>In reality, it was similar to something I was quite familiar with, the pimento cheese sandwich.<\/p>\n<p>A pimento cheese sandwich has a spread that&#8217;s cheese, pimentoes, and mayo, blended together.  Cheese and onions utlizes onions instead of pimentoes.<\/p>\n<p>(Don&#8217;t read any disappointment, veiled or not, into that.  I grew up eating pimento cheese sandwiches and like them a lot.)<\/p>\n<p>But the cheese and onions sandwich an interesting platform on which to build.<\/p>\n<p>There are all sorts of cheeses one can try.  (I can hear Pinky singing &#8220;Cheeses of the World&#8221; in the back of my mind as I type this.)  And there are binding agents one can substitute for the mayo for healthier options.<\/p>\n<p>One of the best mixtures I&#8217;ve found is smoked cheddar, diced onions, and vanilla non-fat Greek yogurt.  The sweetness of the yogurt is a good counterpoint to the cheddar in the spread and the mustard I spread on the bread as well.<\/p>\n<p>Then I might add some sliced ham and even tomato slices.  And that works.<\/p>\n<p>The problem is, I don&#8217;t remember where I bought the smoked cheddar from &mdash; I&#8217;ve tried all the grocery stores I shop &mdash; which led me to try something completely different.<\/p>\n<p>Horseradish Cheddar.<\/p>\n<p>And horseradish goes well with roast beef.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"675\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/07\/IMG_20180718_122048425-1200x675.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31412\" \/><\/p>\n<p>And what else goes well with roast beef?  That NPR Thanksgiving favorite, <a href=\"https:\/\/www.npr.org\/2006\/11\/23\/4176014\/mama-stambergs-cranberry-relish-recipe\">Mama Stamberg&#8217;s Cranberry Relish<\/a>, which I tried for the first time (and made a lot of, which I still have in my freezer) <a href=\"http:\/\/www.allyngibson.com\/?p=31099\">back in November<\/a>.<\/p>\n<p>So, imagine this.<\/p>\n<p>Cheese and onions spread, made with horseradish cheddar.<\/p>\n<p>A slide of roast beef.<\/p>\n<p>Mama Stamberg&#8217;s cranberry relish.<\/p>\n<p>Plus, mustard slathered on the bread.<\/p>\n<p>So, you have all of these things going &mdash; roast beef, cheese, onions, horseradish, mustard, cranberries.<\/p>\n<p>Unfortunately, I couldn&#8217;t pack this lunch at home and take it to work; the cranberry relish would make the bread soggy <i>long<\/i> before I was ready for lunch.  Instead, I made the sandwiches I took to work <i>sans<\/i> relish, put some of the relish in a container, and added the relish to the sandwiches when I was ready for lunch several hours into my work day.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"675\" src=\"http:\/\/www.allyngibson.com\/wp-content\/uploads\/2018\/07\/IMG_20180718_122113134-1200x675.jpg\" alt=\"\" class=\"aligncenter size-fullwidth wp-image-31413\" \/><\/p>\n<p>It was still a little goopy, but it worked.  It worked quite well.  Actually, it was downright <i>awesome<\/i>.
